Celebrate St David’s Day and raise money to help support people living with sight loss in Wales

Join RNIB Cymru in a special Tea for RNIB to celebrate the Welsh National Day! This St David’s Day RNIB Cymru is asking supporters to hold a Welsh cake fundraiser to support people with sight loss. Have fun with your friends, family and colleagues to help a great cause! Below is a Welsh cake recipe to help you get started!

Ingredients:

·         225g plain flour

·         85g caster sugar

·         ½ tsp mixed spice

·         ½ tsp baking powder

·         50g butter

·         50g lard

·         50 currant

·         1 egg beaten

·         Splash milk

Method

1.   Tip the flour, sugar, mixed spice, baking powder and a pinch of salt into a bowl. Then, with your fingers, rub in the butter and lard until crumbly. Mix in the currants. Work the egg into the mixture until you have soft dough.

2.   Roll out the dough on a lightly floured work surface about one inch thick. Cut out rounds using a 6cm cutter, re-rolling any trimmings. Grease a flat griddle pan or heavy frying pan with lard, and place over a medium heat. Cook the Welsh cakes in batches, for about 3 mins each side, until golden brown, crisp and cooked through. Delicious served warm with butter and jam, or simply sprinkled with caster sugar. Cakes will stay fresh in a tin for 1 week.

Every day in Wales 5 people are told that they are losing their sight. With the right support people with sight loss can face the future with confidence. RNIB Cymru is the largest sight loss organisation in Wales. Alongside our extensive campaigning work, we provide frontline services and support to blind and partially sighted people across Wales.
